Nothing says summer like fresh corn on the cob. You’ve probably never given much thought to how this delicious veggie became such a staple of the American summer diet as you’re munching away.

Sweet corn is the result of a fortunate accident. It occurred as a spontaneous mutation in field corn and continued to be grown by several Native American tribes. From then until now, sweet corn has continued to grow in popularity. But all you really need to know is that it tastes delicious.

Here are a few tips to help you enjoy and store your corn at the peak of its sweet goodness:

  • Choose corn with the husks on. Look for husks that are tight and bright green with no brown spots or holes.
  • Use your fingers and feel the kernels under the husk. Choose ears with full, even kernels.
  • Fresh corn can be refrigerated, up to one week, with the husks on until ready to use. Don’t husk until ready to prepare.
  • To freeze corn, bring a pot of water to a boil, then add ears and blanche for about 3-4 minutes. Remove and let ears cool. Cut kernels from cob and place desired quantity in a freezer safe bag and store in the freezer for up to one year.
