Chicken Around the Globe

Hungry for a taste of the exotic even though you’re not traveling at the moment? Just head to your kitchen! We're breaking down the basics of authentic chicken dishes from around the globe.

We’ve taken everyone’s favorite protein and given it the foreign accent of five distinctive, delicious cuisines. With just a few key ingredients, you can turn family dinner into an international affair any night of the week.

Get ready to take your taste buds on a trip around the world, starting with:

Spain. The cuisine of Spain features a bountiful mix of seafood, meat, and poultry, especially chicken. Small roast chicken shops known as pollerias are found throughout the country, particularly in coastal towns where they’re a popular stop for post-beach snacking. The rich flavors of smoked paprika, garlic, and sherry vinegar together with the fresh herbal pop of parsley are key to the Spanish flavor profile. Turn your kitchen into a polleria tonight with authentic ingredients that take sheet pan chicken thighs from everyday to olé!

Korea. When it comes to Korean cuisine, flavor is a multi-dish affair. Meals are traditionally served with several accompaniments, called banchan, a sort of cross between side dish and condiment. Among the most celebrated dishes of Korea is fried chicken, a distinctively crispy version that’s fried twice before seasoning. With a flavor profile that leans toward spicy and salty, Korean cuisine is exemplified by four classic ingredients: ginger, soy sauce, sesame oil, and a red chili paste called gochujang. They’re the key to the deeply complex Korean flavors of this unbelievably easy, light but satisfying grilled chicken recipe.

India. Despite some common ingredients, Indian food is actually a diverse combination of many different regional cuisines. Renowned for a rich mix of spices, the various cuisines of India are much more than curry powder (in fact, curry powder is a British invention created to mimic Indian flavors). Along with coriander, cumin, and turmeric—three must-haves for authentic tasting Indian—garam masala is a signature of the national palate. Literally translated as “hot spices,” garam masala is a sweet-spicy blend that varies regionally but usually includes cumin and coriander along with cardamom, cinnamon, fennel, peppercorns, mace, and dried chilies. Bold Indian spices are the key to our riff on a famous Indian favorite, chicken tikka.

Mexico. Hot and spicy, sour and tangy, cool and refreshing, Mexican food is all about contrasting flavors and textures. Corn tortillas, a staple of the Mexican diet, are a tasty canvas for showcasing all kinds of boldly seasoned proteins topped with cool veggies and fresh herbs. The tropical climate is fertile ground for a range of produce, including limes, cilantro, and oregano, three hallmark Mexican flavors. Chilis are another signature ingredient, none more so than jalapenos. Our chicken tinga tacos combine those bold flavors with the char of chipotles in adobo (jalapenos that have been smoked) for an easy at-home taqueria experience.

Morocco. Influenced by European, Middle Eastern, and African cultures, Morocco is a country as diverse as its cuisine.  Intensely seasoned and aromatic, Moroccan food features a unique combination of sweet, savory, and spicy ingredients. The bold flavors of cinnamon, green olives, fresh mint, and a hot chili paste called harissa represent the traditional Moroccan flavor profile. They’re ingredients commonly found in the nation’s signature dish, tagine, a slow-cooked stew that shares its name with the clay pot used to cook and serve it. No tagine on hand? No problem. This stewed chicken and olives recipe delivers authentic Moroccan flavor directly from your Instant Pot.
