1. Quarter the tomatoes and dice the avocado. Seed the jalapeño and dice finely. Chop the cilantro. Set all prepped produce in a bowl with the lime juice.
2. Cut the mahi-mahi into bite-size cubes and add to the bowl. Season with salt. Gently stir ingredients until fully combined. Set in the refrigerator, covered, for 15 min. before serving.
