Apple, Brussels Sprouts, and Salami Sheet Pan Dinner

Fresh apples add a sweet bite to this all-in-one sheet pan meal.

Ingredients

> 2 lbs Brussels sprouts
> 2 red onions
> 1 lb fingerling potatoes
> 1 (3 oz) pkg salami
> 6 tbsp olive oil
> 1 apple
> 1/2 cup feta cheese
> 3 cups baby kale
> 2 tbsp lemon juice
> 1/4 cup walnuts

Preheat the oven to 400°F. Trim the ends of the Brussels sprouts and cut in half. Peel and quarter the onions. Peel the potatoes and cut into quarters. Slice the salami into strips. Mix the sprouts, onions, potatoes, and salami with 4 tbsp oil and spread on a parchment-lined baking sheet. Season with salt (in moderation) and pepper. Bake for about 20 min. in the oven.

Meanwhile, cut the unpeeled apple into quarters, remove the core and cut the flesh into sections. After 10 min., add the apple to the sheet pan. Mix the feta and kale with the remaining oil and lemon juice and top with walnuts. Serve salad with roasted sheet pan vegetables and salami.
