One Pan White Cheddar Corn Casserole

Ingredients

> 2 tsp canola oil
> 1 cup diced onion
> 2 tsp thyme leaves
> 1 (16 oz) bag frozen sweet corn, thawed
> 1 tbsp flour
> 1 cup milk
> 1 oz (2 T) cream cheese
> 1 cup shredded white cheddar cheese

Preheat oven to high broil and set rack oven rack 8 inches from top of the oven. Set an ovenproof or cast iron 8 inch skillet over medium high heat.

Add the canola oil and onion. Cook, stirring occasionally, until the onion is lightly browned; about 2-3 minutes.

Add the corn and thyme leaves and continue to cook with onions for additional 1 -2 minutes. Add the flour and mix well.

Pour in the milk and add the cream cheese while stirring. Cook until melted and mixture is bubbling and thick. Sprinkle the top with cheddar cheese and place under the broiler for 2-3 minutes or until golden brown. Let stand for a few minutes before serving.
