Green Beans with Slow Cooker Caramelized Onions

These onions caramelize themselves overnight in the slow cooker. Keep leftover onions in the fridge or freeze in smaller portions for instant flavor anytime.

Ingredients

> 3 lbs yellow onions
> 3 tbsp olive oil
> 1/2 tsp salt
> 1 (10 oz) pkg Nature's Promise Organic Green Beans

Halve each onion and thinly slice. In a 6-quart slow cooker, combine the oil, onions, and salt. Cover and cook on low 12 hours, until onions are deep golden brown and soft. Use a slotted spoon to transfer onions to a storage container, discarding excess liquid. Refrigerate until needed.

To blanch the green beans, heat a large pot of salted water to boiling on high. Add the green beans and cook 4 min., until tender. Drain and rinse with very cold water until cool. Drain beans again and blot with paper towels, then transfer to a serving platter. Microwave 1 cup caramelized onions 2 min., until hot. Spoon onions over green beans.
