Ingredients

1/4 (8 oz) pkg cream cheese

2 tbsp confectioners' sugar

1/2 cup pumpkin puree

2 cups graham cracker crumbs

1/2 tsp pumpkin pie spice

2 cups white chocolate chips

In the bowl of a stand mixer, or with a hand mixer, beat the cream cheese and sugar together until combined. Add the pumpkin, 1¾ cups graham cracker crumbs, and pumpkin pie spice and mix until combined. Cover and refrigerate for 1 hour to set.

Place the white chocolate chips in a microwave-safe bowl and microwave for 2 min., stirring every 30 sec., until melted. Meanwhile, scoop and roll the pumpkin mixture into 1-inch balls and place on a parchment-lined baking sheet.

Dip the truffles into the melted chocolate and remove using a fork, tapping off any excess chocolate. Return truffles to the baking sheet. Garnish with remaining graham cracker crumbs. Allow chocolate to harden before serving.
