Crispy tots take the place of chips in this addicting recipe covered in spicy cheese sauce, crisp radishes, and shredded lettuce.
1 (28 oz) pkg frozen tater tots
4 oz American cheese
3 oz pepper Jack cheese
2/3 cup salsa
1/2 (0.75 oz) pkg chives
2 plum tomatoes
1/2 cup shredded lettuce
Preheat the oven to 425°F. Prepare the tater tots according to package directions.
Meanwhile, cut the American cheese into small chunks and shred the pepper Jack. In a medium microwave-safe bowl, combine cheeses, salsa, and 1 tbsp water. Cover with plastic wrap. Poke a few holes in plastic wrap and microwave on high 4 min., until cheese is melted, stirring once halfway through.
Thinly slice the radishes and chives. Seed the tomatoes and finely chop. Cut the limes into wedges. Arrange tater tots on a wide serving platter. Drizzle cheese sauce over tater tots and garnish with lettuce, radishes, tomatoes, and chives. Serve with limes.
