Chorizo Hash with Fried Eggs

If you can only find the 28 oz or 32 oz bags of frozen diced potatoes, just use 1 lb chorizo and bump up the servings to 6.

Ingredients

> 1 red bell pepper
> 2 green onions
> 3/4 lb fresh chorizo sausages
> 1 cup diced onion
> 1 (20 oz) bag frozen diced potatoes, thawed
> 1/2 tsp garlic powder
> 1 1/2 tsp chili powder
> 1 tbsp oil
> 4 large eggs

Steps

Remove and discard the seeds from the red pepper and chop. Thinly slice the green onions. Remove chorizo meat from casings.

In a large nonstick skillet, cook chorizo, pepper, and diced onion on medium-high 5–7 min., until chorizo is browned, stirring constantly and using back of wooden spoon to break up chorizo.

Stir in diced potatoes, garlic powder, chili powder, salt, and pepper. Add ¾ cup water. Cook 8–10 min., until potatoes are hot, stirring constantly and adding ¼ cup more water if mixture is too dry.

Meanwhile, in another large nonstick pan, heat the oil on medium-high. Add eggs and fry 2–3 min., until whites are set but yolks are still runny. Top hash with eggs and garnish with green onions.

Microwave chorizo hash 2–3 min., until warm. In large nonstick pan, fry eggs in oil 2 min., until whites are set but yolks are still runny. Thinly slice green onions. Top hash with fried eggs and green onions.
