Combining two childhood favorites, this sweet treat uses vanilla cookies as a stand-in for pie crust.
1. Coarsely crush the Nilla Wafers and zest the lemon. Squeeze 1 tbsp juice from lemon.
2. To a blender, add the blueberries, milk, lemon zest, brown sugar, lemon juice, and crushed wafers. Blend until wafers break down. Add the ice cream and blend until smooth.
3. To serve, divide among 4 glasses.
