Veggie Race Cars with Hummus

Ingredients

> 3 mini peppers
> 3 mini cucumbers
> 20 cherry tomatoes
> Toothpicks
> 1/4 cup red pepper hummus
> 4 oz chive cream cheese

Steps

Halve the cucumbers lengthwise and scrape out seeds. Halve the peppers lengthwise and remove seeds.

Cut the tomatoes in half. With toothpicks, secure 4 tomato halves to each cucumber and pepper half to form wheels.

Spoon or pipe the hummus and cream cheese into the peppers and cucumbers.
