Happy hour gets a dose of summer in this refreshing cocktail featuring sweet melon and fresh lime juice.
1 baby watermelon
3 tbsp sugar
1/2 cup tequila blanco
1/3 cup triple sec
3 cups ice
Cut the rind from the watermelon, reserving 4 thin wedges for garnish. Cut watermelon into chunks and place in a blender. Squeeze juice of limes into blender, reserving 1 squeezed half. Add the salt and blend until smooth.
Add the sugar to a small plate. Use reserved lime wedge to moisten the rims of 4 cocktail glasses. Dip glasses into the sugar to coat rims.
Strain the watermelon mixture through a fine-mesh strainer into a small pitcher and add the tequila, triple sec, and ice. Stir together until cold. Strain into glasses. Garnish with reserved watermelon wedges.
