Loading up all the familiar flavors of a deli fave–in this case, a decadent reuben–between two slices of whole-grain bread means picky eaters will never notice the swap-out.
2 tbsp light mayonnaise
4 slices multigrain bread
3 tbsp Russian dressing
2 oz thinly sliced pastrami
3 tbsp sauerkraut
4 slices Swiss cheese
Spread the mayonnaise on 1 side of each slice of bread. Place 2 bread slices mayonnaise-sides down on cutting board.
Divide the Russian dressing, pastrami, sauerkraut, then the cheese between the 2 bread slices. Top with remaining 2 slices of bread mayonnaise-sides up.
Place sandwiches in a 12-inch nonstick skillet and heat on medium. Cook 5 min., until crisp, then carefully turn sandwiches over. Cover skillet and cook sandwiches another 5 min., until cheese is melted. Serve immediately.
