Sweet Potato and Broccoli Rabe Hash with Fried Eggs

This healthy spin on hash topped with fried eggs makes a worthy dish for any time of day.

Ingredients

> 1 lb sweet potatoes
> 1/2 lb broccoli rabe
> 2 cups water
> 1 tbsp olive oil
> 1 cup onions
> 1 tsp smoked paprika
> 1/4 tsp crushed red pepper flakes
> cooking spray
> 4 large eggs
> 2 sliced green onions

Peel and cut sweet potatoes into 1-inch cubes. Trim broccoli rabe and chop into 1-inch pieces. Into a 12-inch nonstick skillet, add sweet potatoes and broccoli rabe with water. Heat on high, cover, and simmer 10 min., until water is evaporated and potatoes are tender.

Once water has evaporated, add oil, onions, paprika, red pepper flakes, salt, and pepper to skillet. Cook 5 min., until onions are golden, stirring occasionally.

Meanwhile, coat another large nonstick skillet with cooking spray and heat on medium-high. Crack 4 eggs into skillet and cook 1‒2 min., until whites are set.

Divide hash between 4 plates and top with fried eggs. Garnish with green onions.
