Salad with Sweet Poppy Seed Dressing and Cranberries

This salad comes together quickly with a homemade dressing that’s sure to please. Save yourself some time the night of the main event by making the vinaigrette the day before.

Ingredients

> 1/4 cup white wine vinegar
> 3 tbsp sugar
> 1 tbsp Dijon mustard
> 2 green onions
> 1 tbsp poppy seeds
> 1/3 cup olive oil
> 1 (5 oz) bag arugula
> 2 romaine hearts, chopped
> 1/2 cup dried cranberries
> 3/4 cup chopped walnuts

Steps

In a medium bowl, combine the vinegar, sugar, and mustard, stirring until sugar dissolves. Finely chop the green onions and add to bowl, along with poppy seeds. Gradually whisk in the oil until incorporated. Season with salt and pepper to taste.

In a large serving bowl, combine the arugula, romaine, cranberries, and walnuts. When ready to serve, drizzle salad with dressing and toss until well coated.
