Roast Chicken and Potatoes

For the ultimate comfort food dinner, start the roasting at a high temperature to brown the skin and then lower it to cook the bird all the way through.

Ingredients

> 1 (24 oz) bag Nature's Promise Organic Baby Gold Potatoes
> 1 tbsp olive oil
> 1 lemon
> 6 sprigs thyme
> 1 (4 lb) Nature's Promise Organic Whole Chicken
> Butcher’s twine
> 1 tsp salt
> 1/2 tsp pepper

Preheat oven to 450°F. Arrange a rack in a rimmed baking sheet. Halve the potatoes and toss with the oil. Spread out on rack. Halve the lemon and squeeze juice all over potatoes. Add the lemon halves and thyme to rack. Season potatoes with salt and pepper. Roast 10 min.

Meanwhile, pat the chicken dry all over. Tie the drumsticks together with the butcher’s twine. Tuck the wings behind. Season the chicken all over with 1 tsp salt and ½ tsp pepper.

Push potatoes toward edges of pan. Arrange chicken in center of rack and roast 25 min.

Reduce oven temperature to 375°F and roast another 35–40 min., until thermometer inserted into thickest part of thigh reaches 165°F and potatoes are tender. Let chicken rest 10 min. Serve with potatoes.
