Frozen Honeydew Mojitos

The beauty of a frozen mojito is that there’s a hint of mint in every sip. Adding summer-ripe honeydew gives this Cuban classic a twist.

Ingredients

> 3 cups ice
> 1 1/2 cups honeydew chunks
> 1/4 cup fresh lime juice (from about 2–3 limes)
> 1/4 cup packed fresh mint leaves, plus more for garnish
> 1 cup light rum
> 3 tbsp sugar

Place the ice in a resealable plastic bag. Pressing out any excess air, seal bag. Wrap in kitchen towels and use a rolling pin or meat mallet to break up (or substitute with 2 cups crushed ice).

In a blender, combine the honeydew, lime juice, mint leaves, rum, and sugar. Pulse to break up. Add the ice and blend until smooth, stopping and stirring occasionally. Divide among 4 glasses. Garnish with additional mint.
