Fresh mint and harissa, a Middle Eastern condiment of chilies and garlic, jazz up this pasta recipe.
1 lb rigatoni
3 tbsp olive oil
1/2 cup diced onion
2 tbsp minced garlic
1 tsp ground cumin
1 tbsp harissa
1 lb 93% lean ground beef
1 (4 oz) can tomato paste
1 tbsp finely chopped mint
Cook the rigatoni according to package directions, reserving ½ cup pasta water.
To a 12-inch skillet, add the oil and onion. Cook on medium-high 4–6 min., until onions are golden, stirring often.
To skillet, add the garlic, cumin, and harissa. Cook 2 min., stirring often. Add the beef and tomato paste. Cook 5–6 min., until browned, stirring and breaking up meat with back of spoon. Season with salt to taste.
Toss rigatoni with beef mixture, adding pasta water, if needed. Garnish with the mint.
