Add the dates to a food processor and pulse until in very small pieces.
To food processor, add the cashew butter, oats, vanilla, and cinnamon. Pulse until combined but not puréed.
Line a baking sheet or platter with parchment. Scoop and roll mixture into 1-inch balls, pressing them tightly together. Refrigerate 30 min., until set. Keep in an airtight container in refrigerator for up to 5 days.
