A toss in chili powder and the magic of the air fryer produces irresistible “fried” chicken.
1 cup dry quinoa
8 chicken drumsticks
2 tbsp olive oil
1 tbsp chili powder
3 tbsp finely chopped cilantro
Preheat air fryer to 400°F. Cook the quinoa according to package directions.
Meanwhile, toss the chicken with the oil and chili powder. Season with salt and pepper. Arrange in air fryer basket. Close lid and cook 15–25 min., until cooked through, turning chicken pieces over halfway through.
Toss cooked quinoa with the cilantro and serve with chicken.
