Pork Lettuce Wraps

Ingredients

> 2 tbsp vegetable oil
> 1 tbsp minced garlic
> 1 lb ground pork
> 1 tbsp fish sauce
> 1 tbsp red curry paste
> 1/2 cup packed mint leaves
> 1 head Boston or Bibb lettuce
> 1 lime
> 1 cup matchstick (shredded) carrots

In a 12-inch nonstick skillet, heat the oil on medium. Add the garlic and cook 1 min., stirring often. Add the pork, fish sauce, and red curry paste. Cook 6–7 min., until pork is cooked through, breaking up with back of spoon. Season with salt and pepper to taste.

Meanwhile, finely chop the mint and separate the lettuce leaves. Cut the lime into wedges.

Stir the carrots and mint into pork. Serve pork in lettuce cups with lime wedges.
