Ingredients

3 cups all-purpose flour, plus more for rolling (use all-purpose or semolina)

1 (14 oz) can pumpkin puree (or about 1 2/3 cups homemade puree)
Steps

Add the pumpkin puree to the flour. (This adds moisture and binds like egg would.)

Mix together and knead until stiff.

Roll into thin sheets until almost see-through.

Cut into strips (Or make your own shapes!)

Drop into boiling water a few at a time

Cook for 2 mins or until pasta floats

Drain and toss with olive oil
