Chickpea Salad with Lemon Vinaigrette

Ingredients

> 1 green bell pepper
> 3 tbsp olive oil
> 1/4 cup chopped parsley
> 2 tbsp lemon juice
> 1 tbsp minced garlic
> 1 tbsp Dijon mustard
> 1/2 tsp dried oregano
> 1 (15.5 oz) can chickpeas, drained and rinsed
> 6 cups packed arugula
> 1 cup pita chips, slightly crushed

Seed and chop the bell pepper. To a medium bowl, add the oil, parsley, lemon juice, garlic, mustard, and oregano. Whisk to combine.
