Grilled Steak with Zucchini Rice Salad

A refreshing rice salad of grated summer squash, spicy arugula, and salty Parmesan accompanies grilled steak for an easy summertime dinner.

Ingredients

> 1 (12 oz) boneless strip steak
> 1 (8.8 oz) pkg Nature's Promise® Microwave Long-Grain Rice
> 1 large zucchini
> 4 cups arugula
> 1/4 cup white balsamic vinaigrette
> 1/4 cup finely grated Parmesan cheese

Set grill or grill pan to medium-high. Season the steak with salt and pepper. Grill 5–6 min. per side, until desired doneness. Transfer to cutting board and let stand 5 min.

Meanwhile, heat the rice according to package directions, then let cool slightly. Into a large bowl, coarsely grate the zucchini. To bowl, add the arugula, vinaigrette, Parmesan, and cooled rice. Toss to combine. Season with salt and pepper to taste.

Thinly slice steak and serve with rice salad.
