Pretzel-Crusted Chicken Strips

Ingredients

> Cooking spray
> 1/3 (16 oz) bag pretzel sticks, broken up
> 1/2 cup all-purpose flour
> 1 (1 lb) pkg Nature's Promise® Chicken Breast Tenders, cut into strips lengthwise
> 2 large eggs

Preheat oven to 425°F. Place a wire rack inside a rimmed baking sheet. Coat rack with the cooking spray. To a food processor, add the pretzels. Pulse until very finely crushed. Transfer to a shallow dish.

Add the flour to another shallow dish. Season with salt and pepper. Add the chicken strips to flour, tossing to coat.

Add the eggs to a small baking dish and season with salt and pepper. Whisk until smooth. Add chicken strips to egg mixture, tossing until well coated. Dredge each chicken strip in pretzel crumbs, pressing to adhere. Arrange in single layer on the wire rack, spacing 2 inches apart. Coat chicken with cooking spray.

Bake chicken 15-20 min., until golden brown and cooked through. Season with salt to taste.
