This easy breakfast is perfect for busy mornings, but also pretty enough to serve for brunch or lunch accompanied by a fruit salad. Make it dairy-free by using vegan cream cheese.

Ingredients

> 4 medium radishes
> 3 mini cucumbers
> 8 tbsp dairy or vegan cream cheese, divided
> 4 slices bread, toasted
> 1 (4 oz) pkg smoked salmon

Trim and thinly slice the radishes and cucumbers.

Spread 2 tbsp cream cheese on each toast. Arrange radish and cucumber slices over cream cheese. Divide the smoked salmon among toasts. Season with pepper.
