Broiled Steak with Light Creamed Spinach

Ingredients

> 2 (12 oz) Taste of Inspirations® Boneless Strip Steaks
> 2 tbsp olive oil, divided
> 1 tsp flour
> 1/2 cup 2% Greek yogurt
> 2 (6 oz) pkgs fresh spinach
> 1 clove garlic, minced

Place a large cast-iron pan under broiler. Preheat broiler. Rub steaks with 1 tbsp oil. Season with salt and pepper. Carefully place steaks in pan under broiler. Broil 3–4 min. per side., or cook to desired temperature.

Meanwhile, in a small bowl, mix the flour with yogurt until smooth. In a 10-inch skillet, heat remaining 1 tbsp oil on medium. Add the spinach in batches, stirring until fully wilted. Season with salt and pepper. Add the garlic and cook 30 sec., stirring constantly.

When spinach has wilted, add yogurt mixture to skillet. Cook 1 min. Season with salt and pepper and serve with steaks.
