Wild Rice with Bacon and Onion

This hearty wild rice and bacon preparation is practically a meal in itself, though it makes a perfect autumn or winter side dish for any roast, be it beef, pork or poultry. It cooks up easily on the stovetop while the meat is finishing in the oven.

Ingredients

> 1 cup uncooked wild rice or wild rice blend
> 3 cups water
> 4 slices bacon, diced
> 1/2 cup chopped onion
> 1 stalk celery, sliced
> 1/8 tsp pepper
> 1/2 tsp parsley flakes
> 1/4 tsp salt

Steps

Place rice and chicken stock in a heavy saucepan and bring to a boil.

Reduce heat to simmer; cook 45 minutes or until tender.

Uncover and fluff with a fork.

While rice is cooking, fry bacon in a skillet until crisp and drain on a paper towel.

Wipe skillet with another paper towel, leaving a small amount of grease to saute onion and celery until tender.

Add onion and celery to rice. Stir in pepper, parsley and cooked bacon just before serving.
