Cornmeal adds texture to this bread sweetened with molasses. Use it as sandwich bread, or just slather with butter for your morning toast. Either way, once you try it, you'll be amazed at how easy is to have warm homemade bread.
1 package active dry yeast ( 2 1/2 tbsp )
3 1/2 cups bread flour
1/3 cup yellow cornmeal
1 1/2 cups boiling water
1/3 cup molasses
1 tsp salt
1 tbsp butter, at room temperature
In a medium bowl combine yeast and bread flour.
Place cornmeal into a bowl and carefully pour in boiling water, stirring to make sure mixture is smooth. Stir in molasses, salt and butter. Let stand to cool about 30 minutes.
Add yeast and bread flour mixture. Mix until dough forms. Place dough on a well floured surface and knead dough until elastic and no longer sticky. Place dough back into the bowl, cover and place in a warm place to rise.
Bring dough back out once it rises. Punch down dough and knead for a few minutes. Divide into two separate pieces, shape into loaves and place in well greased loaf pans. Cover and place back in warm place until it rises again.
Bake in a 350ºF oven for about 40 to 45 minutes or until brown.
