Spruce up your morning toast with a schmear of hummus and some avocado. The result: A satisfying breakfast that’s quick, tasty and full of protein and fiber.
1. Toast the bread. Cut the avocado in half lengthways. Remove the pit. Scoop out the flesh and cut into strips.
2. Spread the toast generously with hummus. Top with avocado slices.
3. Cut the mint into thin strips and sprinkle over the avocado.
