Snack time, lunch time, dinner time – this sandwich has got you covered.
8 slices wholegrain bread
olive oil cooking spray
2 heirloom tomatoes
1 (8 oz) ball fresh mozzarella
1 cup basil pesto
Spray one side of each slice of bread with olive oil spray and set aside. Slice the tomatoes and the mozzarella and set aside. Spread pesto on 1 side of each slice and top with tomato and mozzarella. Top with the remaining slices.
Heat a skillet over medium-high heat and cook the sandwiches until the cheese begins to melt and bread turns golden and crispy, about 4 min., turning once. Repeat with remaining sandwiches.
Revive packaged pesto by whizzing with fresh basil and a splash of olive oil.
Like it spicy? Spread 1 half with pesto and the other with chipotle mayo.
