Ingredients

1 lb barbecue pulled pork

1 lb marinated turkey tenderloin

1 lb sweet Italian sausage
>
6 ears of corn on the cob
>
1 bunch fresh asparagus
>
16 oz bag mini sweet peppers
>
1 zucchini, cut into thick slices
>
1 yellow squash, cut into thick slices
>
8 oz baby bella mushrooms
>
1 red onion, cut into chunks
>
Hamburger-sized potato rolls, for serving
>
Dill pickle chips, for serving
>
Whole grain mustard, for serving

Heat grill or grill pan to medium.

Prepare veggie skewers by soaking wooden skewers and cutting veggies into equal size pieces. Alternate zucchini, yellow squash, mushrooms, and red onion on the skewers. Drizzle with olive oil and salt, pepper, and Italian seasoning or coat with a marinade.

Lightly brush the grates with oil. Place tenderloins on grill. Cook 30–40 min., until internal temperature of thickest part reaches 165°F, turning every 10 min.

While turkey is cooking, add sausages and cook 8–10 min., turning occasionally, until cooked through.

Add corn and veggie skewers to grill and cook until grill marks form, turning occasionally, about 10 min.

Warm pulled pork and place in bowl on large platter. Add pickles and mustard in small bowls to platter. Place grilled veggies, rolls, sausage, and sliced turkey around the platter.
