Grilled Chicken with Summer Squash

Ingredients

> 1 (2 lb) pkg boneless skinless chicken breasts
> 1 (16 oz) bottle Sweet Baby Ray's barbecue sauce (or any marinade of choice)
> 2 zucchini or yellow squash, sliced
> 1 Vidalia onion, sliced
> 2 (8.5 oz) packets Seeds of Change 90 Second Rice

Cut each chicken breast horizontally into 2 thin cutlets. Place chicken in bowl and coat with Sweet Baby Ray's barbecue sauce or marinade of choice. Cover bowl with plastic wrap and refrigerate for at least 1 hour.

Season sliced squash and onion with salt and pepper.

Set grill to medium-high and remove chicken from marinade. (Discard marinade.) Lightly brush grates with oil. Transfer chicken to grill. Grill chicken 6-7 min. per side, until an instant-read thermometer reaches 165°F. Grill squash and onion 2–3 min. per side, until tender.

Serve with rice.
