Thai Red Curry Salmon

Ingredients

> 1 lb Giant Brand Fresh Salmon Fillet Tray Pack
> 1/4 cup Taste of Inspirations® Thai-Inspired Red Curry Sauce
> 1 1/4 cups low-sodium vegetable broth or water
> 1 (8 oz) bag Giant Brand Fresh Spinach
> 1 (15.9 oz) pkg precooked Nature's Promise® Whole Grain Brown Rice

For Serving (optional)

> Fresh cilantro leaves
> Lime wedge

Cut the salmon into 2-inch pieces. To a medium saucepan, add the curry sauce and vegetable broth or water. Bring to a boil over medium-high. Add the spinach in batches, stirring until wilted. Season salmon pieces with salt and pepper. Add salmon to curry mixture and return to a boil. Reduce heat to low and cook 3–5 min., until salmon is just cooked through. Remove from heat.

Meanwhile, microwave the rice according to package directions. Divide rice among 4 bowls. Spoon salmon curry over rice. Garnish with the cilantro and lime wedges, if desired.
