The Happy Pear’s Creamy Roasted Red Pepper Pasta

> 10.5 oz whole wheat spaghetti
> 1 cup unsalted raw cashews
> 2 cups oat milk
> 3/4 tsp salt
> 1/4 tsp ground black pepper
> 1 tsp garlic powder
> 1/2 lemon, juiced
> 6 oz roasted red peppers, divided
> 1/2 cup fresh basil


Cook the pasta according to the package instructions.
For the red pepper sauce, blend the cashews, oat milk, salt, black pepper, garlic powder, lemon juice, and 3.5 oz of roasted red peppers until silky smooth. Taste and adjust the seasoning to your liking.
Once the pasta is cooked, drain it, reserving some of the pasta water. Return the pasta to the pot and pour in the red pepper sauce.
Stir over medium heat until everything is well combined and warmed through. If the sauce is too thick, add a few tablespoons of reserved pasta water to reach desired consistency. Simmer until the sauce thickens to your liking.
Slice the remaining red peppers. Serve the pasta hot, garnished with sliced red peppers and chopped basil.
