The Happy Pear’s Grain-Free Granola

Ingredients

> 2/3 cup unsalted nuts of choice such as almonds, cashews, or walnuts
> 1/2 cup unsalted seeds of choice such as sunflower, pumpkin, or sesame
> 1/4 cup dried fruit of choice such as raisins, apricots, or dates
> 1 pinch salt
> 2 tbsp coconut oil
> 2 tbsp maple syrup
> 1/2 tsp vanilla extract, optional
> 1 pinch cinnamon, optional

Add the nuts and seeds to the food processor and pulse until all ingredients are roughly chopped but still have some texture remaining.

Put a large wide-bottomed pan over high heat and add the nut and seed mixture. Toast the nuts for approximately 3 minutes, or until you start to smell them roasting. Add the coconut oil and maple syrup to the pan and heat until coconut oil is melted, stirring continuously so that nothing burns. Once the coconut oil is melted and the mix comes together, turn off the heat. If you are using the cinnamon and vanilla extract, add to the pan and stir to mix until well combined.

Spread the mixture out in the pan and leave to cool in the pan for a few minutes. If any dried fruit pieces are bigger than bite-size, chop them. Once the mixture in the pan has cooled, add the dried fruit and mix until well combined. Store in an airtight container or jar for up to 6 months.
