Ingredients

1 (1 1/2 lb) pkg boneless, skinless chicken breasts

1 red bell pepper, seeded and chopped

1 cup jarred Alfredo sauce

1/2 (16 oz) pkg orzo

1/2 (5 oz) pkg Nature's Promise ® Organic Baby Spinach

Season the chicken with salt and pepper. Heat a 12-inch greased skillet on medium-high. Add chicken to skillet and cook 3–4 min. per side, until chicken is golden. (Chicken will not be cooked through.) Transfer to a plate.

To skillet, add the chopped bell pepper. Season with salt and pepper. Cook 4–5 min., until tender, stirring occasionally. To skillet, add 1¾ cups water and the alfredo sauce. Season with salt and pepper and bring mixture to a boil.

Once boiling, stir in the orzo and spinach. Return chicken (and any juices) to skillet. Cover with lid, reduce heat to medium-low, and cook 12–14 min., until orzo is tender and chicken is cooked through, stirring occasionally. If desired, slice chicken breasts and return to skillet. Serve immediately.
Tips
If desired, garnish with chopped parsley.
