Grilled Cheese Hot Dogs

This fun mash-up takes the classic hot dog to new heights. Seared hot dogs are tucked into buns with cheese and griddled in butter until golden. They’re ready in just 15 minutes and are bound to please any hungry crowd!

Ingredients

> 8 hot dogs
> 1 (8 oz) bag Mexican cheese blend
> 8 hot dog buns
> 2 tbsp unsalted butter
> Ketchup and mustard, to serve

Slice each hot dog lengthwise, being careful to not cut all the way through hot dog. Heat a 12-inch skillet or a grill pan on medium-high. Add hot dogs, flattening a bit with a spatula, and cook each side 1–2 min., until golden. Remove from skillet.

To assemble the grilled cheese hot dogs, sprinkle half the cheese over roll bottoms. Top with hot dogs, then sprinkle with remaining cheese. Reduce heat to medium-low and melt 1 tbsp butter. Cook 4 filled hot dog buns, 2–3 min., until bottoms are golden, pressing down with spatula. Flip and cook 1–2 min. more, until golden and cheese is melted. Repeat with remaining 1 tbsp butter and remaining hot dogs. Serve immediately with ketchup and mustard to dip in.
