What is corned beef anyway, and just how Irish is it? The name is derived from the “corns” of rock salt originally used to cure beef, traditionally brisket. Initially the salt was used merely to ensure that the meat wouldn’t go off in the days before refrigeration. Later some enterprising cooks added flavorings like coriander and caraway and turned corned beef into the tasty deli staple we all love today. As for its Irish roots, it’s more likely that Irish immigrants to the United States adopted corned beef as a tasty and economical dish.
