Cook Once, Eat Twice: Ground Turkey Fried Rice

Enjoy turkey fried rice tonight, then transform the leftovers into a hearty soup for another meal later.
Cook Once Eat Twice meal planning

Save time and money with a cook once, eat twice meal strategy: Make a little extra with one meal for now, then transform those leftovers into a simple, quick meal for later in the week. Cook once, eat twice helps you make the most of value-sized packages of meat and other ingredients when they go on sale and takes care of a second meal on another busy night when you’d usually lean on takeout.

Start off with turkey fried rice. This version cuts out prep with precooked jasmine rice and frozen mixed vegetables. Lean ground turkey adds plenty of protein. It all cooks together in one Dutch oven to keep cleanup easy. Before serving, you’ll save about 3 cups fried rice for ground turkey and rice soup with vegetables. Place in airtight container and refrigerate for a meal later in the week.

Ground Turkey Fried Rice

Use the ground turkey fried rice you reserved to make ground turkey and rice soup with vegetables. This recipe also uses just one pot. In a medium pot, bring a 32 oz container of chicken broth to a boil on high. Stir in the reserved 3 cups turkey fried rice, along with one 8 oz bag fresh spinach and 1 tsp fresh lemon juice. Season with salt and pepper to taste, then simmer for 5 min. and serve.
