Slow Cooker Citrus Spiced Pork Carnitas

A batch of Pork Carnitas gets everyone to the table, and the slow cooker makes it hands-off easy! Tailor it to your liking with beer or chicken broth, then serve with all the fixings for a sweet and spicy weeknight dinner made easy.

Chicken Tacos with Cabbage, Avocado Salsa and Lime Cream

Packaged chicken strips are the jumping off point for this easy recipe, designed to make Taco Tuesday a snap. We’ve utilized lots of fresh ingredients, like avocados, cilantro and cabbage, but you won’t believe how easy they are to toss together. Don’t skip the lime cream – it’s the perfect finishing touch!

Posole with Green Chiles

It’s true – Posole is possible on a busy weeknight! A rotisserie chicken and a carton of tomato bisque cut prep time, and a few add-ins make it a meal. For a little added crunch, top with crunchy tortilla strips or broken chips.

Chicken tortilla soup

Hearty, smoky, and worthy of your biggest soup spoon, this quick and easy soup is a winner with the whole family. Sweet corn, fire-roasted tomatoes, and black beans all add up to a fiesta of flavor that only takes 30 minutes to whip up. Leave out the jalapeño to cut the heat, if you’d like.

Mexican wedding cookies

These tender, melt-in-your-mouth cookies are a sweet treat that dresses up or down for any occasion. Kids love rolling the dough into balls and tossing the warm cookies in powdered sugar, so enlist a little help and make a batch to celebrate National Hispanic Heritage Month!
