Sweet Orange Chicken and Asparagus Stir-Fry

A classic, zesty stir fry, this meal is refreshingly easy to make. No need to live in your kitchen, the rice cooks while you prep the rest of the meal, and as a bonus stores well for leftovers. To be sure, the Mandarin oranges are a must-have, as they add that signature sunshine to the overall flavor. Like your asparagus crunchy? Take care not to overcook.

Apricot-Lemon Chicken and Snow Peas

This dish is fast—as in “15 minutes” fast! Soy sauce, dried apricots, and snow peas make for a unique balance of sweet and savory. You’ll want the snow peas slightly crisp, so really watch the timing and pull them as soon as they’re tender. And don’t worry about those pungent flavors of lemon and apricot, which tend to mellow deliciously in the pan.

Quick Chicken Pad Thai

This recipe has it all – peanuts, eggs, fish sauce—everything you’d expect from a recipe so popular, it’s become Thailand’s national dish. A couple quick notes: Be sure to pick up pre-made zucchini noodles in-store. We’re so lucky to have them—such a time saver! Also, canola oil is great for stir-fry, but feel free to sub-in grapeseed or any of the high heat oils like peanut, safflower, or sesame.

Mushroom Lasagna with Blue Cheese Alfredo

We’ve got a new riff on lasagna, one of our favorite classic crowd-pleasers. This version features a creamy alfredo sauce, and packs in a whole pound of cauliflower. Piles of rosemary-infused mushrooms make it hearty, and the blue cheese throughout makes this meat-free meal nothing short of scrumptious.
