Sheet Pan Eggnog Pancakes Are the Ultimate Holiday Breakfast

Whether you’re hosting a holiday brunch or feeding hungry houseguests, the last thing you want is to be scrambling eggs — or flipping pancakes — while everyone waits for you at the table. Luckily, there’s a way to serve all your guests a warm, freshly-baked breakfast without standing at the stove all morning. The secret? Sheet pan pancakes.  

Sheet pan pancakes are a total game-changer for a number of reasons. To begin, there’s the fact that you can make 12 servings of pancakes all in one go. Unless you own multiple griddles or have a lot of helping hands, that’s pretty impossible on the stovetop. And while you can certainly cut the giant pancake into thick and fluffy squares, you can also pull out your cookie cutters and have a little fun. (The scraps, of course, become the cook’s treat!)  

Secondly, you can whip up the batter in its entirety the night before your brunch. In the morning, all you have to do is spread it into a baking sheet and bake for 12 to 15 minutes — leaving you time to tidy up the house, turn on some tunes, and mingle with your guests as they arrive. Plus, pancake batter actually gets better as it rests — the flour softens, any lumps dissolve, and the leavening gets more evenly distributed — meaning that the baked pancake will be fluffier and more tender than had it been baked straight away. Win, win!

The sweet and creamy eggnog takes the place of milk or buttermilk and eliminates the need for any extra sugar. A little dash of nutmeg — both to the batter and to the top of the finished pancake — amps up the warmly spiced flavor even more.
