> 1/2 cup dark rum
> 1/2 cup brown sugar, packed
> 1 tsp ground cinnamon
> 1 pineapple, cored and cut into 6-8 rings
> 1 carton vanilla ice cream, for serving
Mix rum, brown sugar, and cinnamon until smooth.
Pour mixture over pineapple rings until coated, and soak for 15 minutes, flipping midway.
Grill 1-2 minutes per side, and serve with a scoop of vanilla ice cream.
