Shrimp with Easy Romesco Sauce

Put a twist on a classic appetizer and make this quick four-ingredient romesco sauce for dipping poached shrimp.

> 2 (12 oz) bags Nature's Promise® Peeled and Deveined Large Raw Shrimp, thawed
> 1/2 cup roasted red peppers, drained and rinsed
> 1/4 cup roasted unsalted almonds
> 1/2 cup cocktail sauce
> 2 tbsp olive oil


Heat a large pot of water to a boil on high. Reduce heat to simmer. Add the shrimp and cook 3–5 min., until cooked through. Drain and rinse with cold water until cool. Pat dry and use immediately or refrigerate until chilled.
In a food processor, combine the peppers, almonds, cocktail sauce, and oil. Season with salt and pepper. Pulse until a smooth consistency is reached. Serve with the shrimp.


For a quicker version, use frozen cooked shrimp instead of cooking raw shrimp.
