Ingredients

> 3/4 cup + 2 tbsp granulated sugar, divided
> 2 large eggs
> 1/2 cup vegetable oil
> 1 1/2 tsp vanilla extract
> 1 1/3 cups all-purpose flour
> 4 tsp pumpkin pie spice or apple pie spice, divided
> 1 1/2 tsp baking powder
> 1/2 tsp salt
> 2 Granny Smith apples or Pink Lady apples
> 1/2 cup confectioners' sugar
> 1 tbsp lemon juice

Preheat oven to 350°F. Line a 9x5-inch loaf pan with parchment, leaving a 2-inch overhang on each side.

In a large bowl, whisk together ¾ cup granulated sugar, eggs, oil, and vanilla until combined. To bowl, add the flour, 3 tsp pie spice, baking powder, and salt. Stir just until no streaks of flour remain.

Peel, core, and cut each apple into 1-inch chunks for about 3 cups chopped apples. In a medium bowl, combine apples, remaining 2 tbsp granulated sugar, and remaining 1 tsp pie spice. Toss to combine.

Pour half the batter into prepared loaf pan. Add apple mixture, then top with remaining batter. Bake 50–60 min., until a toothpick inserted into center comes out clean. Let cool in the pan for 30 min. Use the parchment to lift cake onto a wire rack and cool completely.

Just before serving, in a small bowl, whisk together the confectioners’ sugar and lemon juice until smooth. Drizzle over cake.
