4 boneless, skinless chicken breasts (about 2 lbs)

1/2 cup Caesar dressing

1 1/2 cups Cheez-It ® Smoked Gouda Baked Snack Crackers

1/3 cup mayonnaise

2 tbsp chopped parsley

Preheat oven to 425°F. Working one at a time, add the chicken breasts to a resealable plastic bag. Using a meat tenderizer or heavy rolling pin, flatten breast to an even ½-inch thickness. Arrange chicken in a 9x13-inch baking dish in a single layer and pour the Caesar dressing on top. Flip the chicken pieces in dressing to evenly coat. Season chicken with salt and pepper.

Add Cheez-It® crackers to a clean resealable plastic bag and seal. Use a rolling pin to crush crackers into large crumbs. Spread mayonnaise on top of each chicken piece, then top with cracker crumbs. Bake 20–25 min., or until an instant-read thermometer registers 165°F. Garnish with the parsley and serve.
