Loaded Cracker Toffee

Layered with toffee, dark chocolate, chopped pecans, and coconut flakes, this irresistible treat is made with two different crackers for a fun twist. After they set in the fridge, break them into pieces to gift in a cookie box—or to snack on all week long!

Ingredients

> Cooking spray
> 34 Club ® Original Crackers
> 24 Town House® Pretzel FlipSides® Original Crackers
> 1 cup (2 sticks) unsalted butter
> 1 cup packed light brown sugar
> 1 tsp vanilla extract
> 2 cups dark chocolate chips
> 2/3 cup chopped pecans
> 1/4 cup sweetened coconut flakes

Preheat oven to 400°F. Line a rimmed baking sheet with foil and coat with the cooking spray. Alternating rows of each type of cracker along the short side of pan (beginning with the Club® Crackers, then a row of FlipSides® Original Crackers, etc.), arrange the crackers in an even layer to cover the baking sheet without gaps, breaking crackers to fit if necessary.

In a medium saucepan, heat the butter, sugar, and a pinch of salt on medium until mixture comes to a boil, whisking constantly. Cook 3 min. more, until mixture becomes foamy and thick, whisking constantly. Remove from heat and whisk in the vanilla.

Carefully pour toffee over crackers. Using a rubber spatula, spread toffee into an even layer to cover the crackers completely. Bake 4–6 min., until toffee is golden and bubbling.

Remove from oven and immediately scatter the chocolate chips on top of toffee. Let sit 5 min., until slightly melted. Spread melted chocolate evenly over surface of toffee and sprinkle with pecans and coconut. Refrigerate until chocolate sets, about 1 hour. Break into bite-size pieces. Store leftovers in an airtight container in the refrigerator for up to 4 days.
