Antipasto Party Cups

These portable snack cups are great for a party, allowing guests to freely mingle while enjoying their own handheld antipasto spread. Customize according to your preferences, but a mix of nuts and dried fruit, stuffed olives and peppadews, salami, mozzarella pearls, grapes, and crackers is a delicious place to start.

Ingredients

> 8 (9 oz) crystal clear party cups
> 2 cups lightly salted deluxe mixed nuts, divided
> 1 cup sweetened dried cranberries, divided
> 16 whole sweet peppadew peppers, drained
> 2 oz cream cheese, room temperature
> 16 small skewers
> 16 stuffed manzanilla olives, drained
> 2 (4 oz) pkgs sliced Genoa salami
> 1/2 (8 oz) pkg fresh mozzarella pearls
> 1/2 (9 oz) box baked whole wheat crackers
> 1 (8.8 oz) pkg olive oil grissini (Italian breadsticks)
> 2 cups seedless red or green grapes
> 8 rosemary sprigs, to garnish

To each plastic cup, add ¼ cup mixed nuts and 2 tbsp dried cranberries. Toss to combine. Stuff the peppadew peppers with the cream cheese. On 8 skewers, skewer 2 stuffed olives and 2 stuffed peppadew peppers in alternating pattern. Add skewers to cups.

Fold a salami slice in half, then in half again and skewer on each of remaining 8 skewers. Add 2 mozzarella pearls to each skewer. Repeat in alternating pattern with as many folded salami slices and mozzarella pearls as fit on skewers. Add skewers to cups.

Add 3 baked whole wheat crackers and 2 grissini, broken in half, to each cup. Divide the grapes among cups (about ¼ cup grapes per cup). Garnish with the rosemary sprigs and serve immediately.
