> 1 (8 oz) box yellow rice
> 8 chicken drumsticks
> 2 tbsp vegetable oil, divided
> 2 tsp ground cumin
> 3 green onions, trimmed
> 2 medium tomatoes, chopped
Heat the grill to medium. Cook the rice according to package directions.
Meanwhile, toss the chicken with 1 tbsp oil and cumin. Season with salt and pepper. Brush the green onions with remaining 1 tbsp oil.
To grill, add chicken and green onions. Grill green onions 1–2 min., just until green onions are slightly charred, and remove from grill to cool. Grill chicken 25–30 min., covered, turning occasionally until chicken is fully cooked and reaches 165°F on instant read thermometer.
Meanwhile, chop the tomatoes. When green onions are cooled, finely chop. Fluff rice and fold in tomatoes and green onions. Serve rice with chicken.
